Not really. It takes about the same amount of pressure to scratch either one of them. In order to scratch granite or quartz with a common knife, you would have to be pretty aggressive and use a very heavy sharp knife, and almost purposely try to scratch it. Many people use their quartz or granite countertops as their cutting boards.
